Irish food gets a bad rap sometimes, and honestly, a lot of people couldn't name a single Irish dish beyond a fry-up. But if you've ever torn open a spice bag on a Friday night, bitten into proper boxty, or warmed yourself with a bowl of coddle on a miserable November evening, you know — this food doesn't need defending.

Living here in Cork, I've come to love Irish food the way I love Finnish food: not because it's trying to be something, but because it isn't. It's unpretentious, generous, and built for days when the weather is doing its absolute worst. These are the recipes I've picked up since making Ireland home — some traditional, some just very, very Irish.
