If I'm not cooking Finnish food, there's a very good chance I'm making something with a pile of spices and a pot of rice. Asian cooking is where I go when I want bold, layered flavours — the kind of meal where your kitchen smells incredible for hours afterwards.

These aren't traditional family recipes, and I won't pretend they are. They're the dishes I've learned to cook because I genuinely love eating them — adapted for what I can find in Dunnes Stores, scaled for batch cooking, and tested on friends who'd tell me if they were terrible.
