Super Crunchy & Fresh Cauliflower Salad
Super crunchy and fresh cauliflower salad, perfect to pair with your favourite foods and summer barbecue.
Cauliflower, along with broccoli and carrot, has to be one of my favourite things to roast in the oven and serve along with food. However, cauliflower is also excellent without cooking it as is.
Its crunchy and peppery flavour pairs perfectly with all types of food. I suggest serving this salad with Finnish Macaroni Casserole, or even with Irish Guinness Stew. It’s also great for your summer barbecue. As it has no salad leaves, it doesn’t wilt and lasts quite well in the fridge and on the table at a warm summer barbecue.
Preparing this dish is easy, you prepare your vegetables and sauce, and then just combine everything. The sauce combines everything together and highlights the bright and peppery notes of the cauliflower.

Super Crunchy & Fresh Cauliflower Salad
A refreshing and crunchy cauliflower salad that’s perfect for summer barbecues, pairing well with a variety of dishes such as Finnish Macaroni Casserole.
Ingredients

For the salad
- 1.0 small cauliflower, broken into florets
- 250.0 gcherry tomatos, halved
- 0.5 cucumber
- 1.0 small red onion, diced
- 0.5 cupchopped parsley

For the sauce
- 2.0 tbspolive oil
- 1.0 clovegarlic, minced
- 1.0 tsphoney or golden syrup
- 1.0 tsplemon juice
- 0.5 tsprice wine vinegar
- to tastesalt and pepper
Instructions

- 1Break the cauliflower into small florets, halve the cherry tomatos, chop up the cucumber and the onion.
- 2Mix the sauce ingredients together in a small dish.
- 3Put everything in a large bowl and mix well.
- 4Serve the salad with your favourite dishes, like Finnish Macaroni Casserole, or your favourite barbecue.
