  • For the Filling

  • 2.0 tbspolive oil
  • 1.0 large onion, finely chopped
  • 2.0 clovesgarlic, minced
  • 2.0 large carrots, diced
  • 2.0 celery sticks, diced
  • 500.0 glamb mince
  • 2.0 tbsptomato paste
  • 1.0 cupbeef or lamb stock
  • 1.0 cupred wine
  • 1.0 cupfrozen peas
  • 2.0 tbspWorcestershire sauce
  • 1.0 tspfresh thyme, chopped
  • 1.0 tspfresh rosemary, chopped
  • to tastesalt and pepper
  • For the Mashed Potatoes

  • 1.0 kgpotatoes, peeled and diced
  • 75.0 gbutter
  • 0.5 cupmilk
  • to tastesalt and pepper

Prepare the Filling

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add the onion and garlic, and sauté until soft and translucent.
  3. 3Add the carrots and celery, and cook until they start to soften.
  4. 4Increase the heat to medium-high, add the lamb mince, and cook until browned.
  5. 5Stir in the tomato paste, cooking for another minute.
  6. 6Pour in the stock and red wine, add the peas, Worcestershire sauce, thyme, and rosemary.
  7. 7Season with salt and pepper.
  8. 8Reduce the heat and simmer for about 20-25 minutes, allowing the mixture to thicken.

Prepare the Mashed Potatoes

  1. 1While the filling is simmering, boil the potatoes in salted water until tender.
  2. 2Drain the potatoes and return them to the pot.
  3. 3Add the butter and milk, then mash until smooth.
  4. 4Season with salt and pepper to taste.

Assemble

  1. 1Preheat your oven to 200°C (400°F).
  2. 2Transfer the meat filling to a large baking dish.
  3. 3Spoon the mashed potatoes over the top, spreading them out evenly.
  4. 4Use a fork to create a rough texture on the top (this helps it crisp up).
