Prepare the Filling

  1. 1Heat olive oil in a large skillet over medium heat.
  2. 2Add the onion and garlic, and sauté until soft and translucent.
  3. 3Add the carrots and celery, and cook until they start to soften.
  4. 4Increase the heat to medium-high, add the lamb mince, and cook until browned.
  5. 5Stir in the tomato paste, cooking for another minute.
  6. 6Pour in the stock and red wine, add the peas, Worcestershire sauce, thyme, and rosemary.
  7. 7Season with salt and pepper.
  8. 8Reduce the heat and simmer for about 20-25 minutes, allowing the mixture to thicken.

Prepare the Mashed Potatoes

  1. 9While the filling is simmering, boil the potatoes in salted water until tender.
  2. 10Drain the potatoes and return them to the pot.
  3. 11Add the butter and milk, then mash until smooth.
  4. 12Season with salt and pepper to taste.

Assemble

  1. 13Preheat your oven to 200°C (400°F).
  2. 14Transfer the meat filling to a large baking dish.
  3. 15Spoon the mashed potatoes over the top, spreading them out evenly.
  4. 16Use a fork to create a rough texture on the top (this helps it crisp up).

Bake & Serve

  1. 17Place the baking dish in the oven and bake for about 25-30 minutes, until the top is golden brown and crispy.
  2. 18Let it cool for a few minutes before serving.
